2 pounds of homemade swiss cheese (using the traditional swiss recipe from Home Cheese Making). Its been sitting on the counter for about a week and you can see how it has started to swell up (both the top and sides are bulgy where it used to be completely flat). This needs another week on the counter and then 3 months in the "cheese cave" before its ready for tasting.
